Dry, Full Bodied style of Cabernet SauvignonYarra Valley, AustraliaThe vineyard series range of wines by David Bicknell at Oakridge matches particular varieties of wines with specific sites, showcasing outstanding examples of single vineyard wines. This wine was sourced from the north-facing Hyde Park vineyard sited in the grey alluvial loams of Coldstream. Vintage 2021 was a long, cool growing season with average cropping levels and ample rainfall has resulted in wines with outstanding varietal definition and purity. A traditional winemaking approach was used to produce this wine – fermentation on skins with twice daily pump-overs for four weeks followed by a 15-month maturation in 225 litre French oak. Dark garnet with light purple hues. Initially , very much about black fruit; blackcurrant, poached plum and cassis then hints of cranberry , cherry pip and a light leafiness before a rumble of wet tobacco and cedar take over. Soft, dense and concentrated with a web of filigreed tannin encasing the black fruits and cedar. Acidity is bright, fresh and fruit flavoured. Classic cool-climate Cabernet.

Coldstream is home to some of the Yarra Valley's finest Cabernet Sauvignon wines. Think, Coldstream Hills, Yeringberg, Mount Mary. The Hyde Park vineyard is on the preferred north-facing slope in the Coldstream region. The resultant wine, from the long, cool 2021 vintage, expresses the variety admirably, reminiscent of good claret with an Antipodean twist. Medium bodied, elegant, red fruit noticeable, but with a black currant heart. Fine-grained finishing tannins - drinkable early, but with excellent cellaring potential.
