And what do bartenders want? More booze, for one, to stand up to dilution in cocktails, more modern branding to match the sleek aesthetic of Australia’s classy drinking dens, and plenty of fruit character without aggressive sweetness. St Agnes has delivered a wonderfully rich and powerful brandy that’s become a staple of Aussie cocktail lists. There’s perfume, dried fruit and oak in excellent balance here, and a sweeter, denser palate than the VS or VSOP, but still a nice dry finish. For serious brandy drinkers, this would be the first St Agnes to reach for, as pleasant to sip on as it is to work with behind the bar.
