Dry, Medium Bodied style of ShirazMargaret River, AustraliaThis shiraz was sourced from the Wills Domain Yallingup Estate vineyard and the Alan Rock vineyard in southern Yallingup. Machine picked in the cool of the morning and gently de-stemmed and cold-soaked for two days prior to inoculation. The juice was pumped over daily to maximize the colour concentration and favour, but without extracting any harsh tannins. Post fermentation the wine was left on skins for five days before being pressed and sulphured. Following maturation on French oak for ten mo
