Yallingup EstateThe Coveted Chardonnay 2020
About this product
The Chardonnay grapes were gently harvested in the cool of the morning, destemmed and pressed directly to barrels. Natural fermentation in barrels commenced after 3 to 4 days, and once dry batonage was undertaken periodically over the 9 months the wines were in barrel. 20% of the blend was put through Malo-lactic fermentation to introduce some added complexity and buttery flavours. In late November the barrels were emptied, the wine stabilised and bottled.
