About this product

Onannon is a three-man team comprising close mates Sam Middleton and Kaspar Hermann (both of Mount Mary), and Will Byron of Stonier. This is 100% 95 clone Chardonnay from a single site in Tuerong. Fruit is crushed into the press, after which it's settled overnight and then racked to barrel. The Onannon team played around with different levels of solids, and a combination of yeasts was used to help build complexity. No MLF. 20% new French oak, 10 months in barrel. The nose is smoky with grilled hazelnut, nectarine and ghee. It has a very tight, clean attack, a pure soda/mineral mid-palate. It's more delicate than the '16 with better oak integration and finishes with clean, chewy savouriness and lively length.
