50% Pinot Noir and 50% Chardonnay made exclusively with grapes from the exceptional 2008 harvest. Only the first press (la cuvée) is used and only the best of that pressing is kept. Harvested by hand, whole bunch pressed, primary fermentation at 17˚C and malolactic fermentation in temperature controlled stainless steel tanks. Lengthy secondary fermentation takes place 15 metres underground in traditional chalk cellars (Forget-Brimont are one of the last houses of Champagne to still continue digging its own cellars today). Aged in the chalk cellars for atleast 10 years, then left to rest for 12 months after dosage. Flavours of brioche and toasted bread with hints of dried fruits, hazelnuts, almonds and vanilla. A mature, round wine with a silky finish.
