The grapes were machine harvested then destemmed crushed into fermenters where it was cold soaked to extract and retain desirable varietal flavours and aromas. When actively fermenting post inoculation they were pumped over with aeration twice a day, temperature was held around 25°C to prevent over extraction of tannins.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Here's a compact wine that's really coming into its own. A vibrant colour and full fruited nose lead to a lovely spiced dark fruit character, strangely like the kind you find in a hot cross bun. A lick of white pepper on the finish, a comfortable carpet of tannins and this well-balanced, generously flavoured Shiraz is ready to go.
