The Cabernet Sauvignon parcel was destemmed and crushed to a static tank and inoculated immediately with a Bordeaux yeast strain. The tank was pumped over as required to maximise the wines extraction and fruitfulness. The wines were fermented on skins to dryness at a maximum of 26°C and pressed after eight to twelve days. The wine was racked to barrel for Malo-lactic fermentation and was then matured for ten months in 10% new French oak barriques.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Offering gorgeous varietal notes of cassis, dark cherry and dried herbs with nuances of roasted nut and floral, the wine shows excellent mid-palate weight and fruit intensity, wonderfully complemented by smooth mouthfeel and chalky tannins. Harmonious, flavoursome and highly enjoyable. At its best: now to 2028.
