The fruit was harvested on a cool early morning in March to retain freshness. It was transported directly to the winery for processing. Free run and pressings were kept separate.
The free run was inoculated with X5 a strong fermenter to produce fruity esters. The pressings were inoculated with VL3 to create a more thiol driven parcel. A small portion of free run was clarified and racked to barrel for wild fermentation.
The stainless- steel portions were fermented between 12-15°C to cap

Light bodied white wines have a water-light mouthfeel. Often very pale to light colour.
Dry wines have no trace of sweetness at all.

It's fabulously fruited and intensely aromatic, showing green rockmelon, kaffir lime, crunchy apple and nectarine aromas on the nose, leading to a lively palate that's juicy and bright. Brilliantly structured by crisp acidity, finishing lingering and mouth-watering. At its best: now to 2024.
