The fruit was destemmed to a static fermenter and inoculated immediately with a Bordeaux yeast strain. The wines were fermented on skins to dryness at a maximum of 28°C and pressed after 15 days. The wine was racked to barrel for Malolactic fermentation and was then matured for 12 months in French oak barriques.
