On the nose, ginger and chamomile and lashings of lemon tea with a hint of smoky whisky. A generous and textural palate of grilled stone fruits and grapefruit pith with a salivating, saline finish. Savoury, complex and mineral yet perfectly balanced.The Vermentino grapes are wild fermented on skins and we lightly plunge the cap a couple of times a day. After 7 days, the skins are basket pressed and the wine is matured on yeast lees for 12 months; six months in seasoned french oak followed by six months in stainless steel. Medium bodied white wines have a lightly textured mouthfeel with moderate flavour impact. Often pale lemon coloured to pale gold.
