Cabernet Sauvignon and Shiraz have been part of the Yarra Yering vineyard since the first vines were planted in 1969. Yarra Yering has had a reputation for being master blenders since the first wines produced in 1973. Until this 2019 Cabernet Shiraz, never had Cabernet Sauvignon and Shiraz been blended.
Highly perfumed with summer pudding fruits, the Cabernet Sauvignon bringing a texture and structure that is fleshed out and softened with the Shiraz component. Fruit purity, bright vibrant acidity and a medium body make for a delicious cool climate wine.
All fruit is hand harvested, the Shiraz bunches sent across a sorting table, gently destemmed so only the very best berries go into this wine. Whole berry ferments like this bring fragrance and flesh to the wine. The Cabernet Sauvignon fruit is first bunch sorted, then destemmed and individual berry sorted. This ensures no green characteristics are present.
All fermented in 600kg fermenters and hand plunged twice daily for gentle tannin extraction.
French oak maturation in the underground cellar with 20% new barrels for 18 months.
