Dry, Full Bodied style of Cabernet SauvignonMcLaren Vale, AustraliaThe Estate Cabernet Sauvignon is a true reflection of the 2 terroirs of DOWIE DOOLE. A blend of these two unique terroirs, stronger together than they are apart. The cool slope of Blewitt Springs gifting the wine with the cooler spectrum of Cabernet Sauvignon fruit and fine lingering tannin line. Combined with the Mediterranean Tatachilla vineyard offering darker, richer notes to the wine. Each block in each vineyard is harvested, fermented and matured in oak separately. Finally after 20 months maturation each barrel was tasted and carefully assessed before the final blend was assembled. Ensuring a balance of characters between the 2 terroirs of DOWIE DOOLE is maintained. The two vineyards thereby combining their two unique terroirs to produce a truly individual wine.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Matured in 90% French oak, 10% American. It's worth decanting this as it really builds as it breathes. It's curranty, kirsch-like and solid with bay leaf, cedar-cream and choc-mint flavours impressing on the palate. Tannin is firm, dusty and confidence-building. You take a sip and feel as though you can rely on this wine; it's got this, so to speak.
