Adding aromatic spelt malt to locally grown barley results in a beer that’s both simple and intriguing. Whilst it’s every bit a crushable summer sour, there’s rolling layers of flavour and complexity from the spelt and Sauvignon Blanc-ish hop character, all tied up with a refreshing acidity.
