Working with our vigneron friends at Provenance Wines, we carefully crafted the naturally fermenting Saignee and added it to the base beer to mature in barrel for 12 months. Unlike previous years, this, the 2020 vintage, needed to be locked up a little longer to condition unfiltered in bottle for a further 15 months before being released for your enjoyment. So whilst it’s not without its challenges, with challenge comes reward. part science. part artisanship. part luck.
