Highbury Fields Great Southern Riesling 2019

Several picks ensure optimal ripeness across the vineyard. Destemmed & crushed before pressing. The juice chilled and cold settled. Each parcel kept separate and fermented at cooler temperatures to retain as much vitality as possible. Mostly cultured yeast however some natural fermentation is allowed. Once alcoholic fermentation was completed, some parcels were racked off yeast lees early, with other component left on lees for a period post ferment to build texture. Blended, filtered and bottled.
