Aarón Robles is a first generation mezcalero with over 15 years of experience in artisanal mezcal production. Agave Potatorum (aka Tobala) is extremely low yielding yet highly complex with flavour. Limited to 6000L a year, this Tobala Mezcal offers aromas of honey, florals and light smoke. The mouthfeel is complex and delivers sweet undertones. The agaves grow alongside a river that runs through the Sierra Madre del Sur, San Pedro Totolapam, in Oaxaca. The Agave piñas are roasted in rock lines pits, milled with a stone tahona wheel, fermented in oak wood vats and double distiller in copper alembic pot stills.
