The Aligote grape is very famous in Burgundy but for a long time was only known for its use in the fabrication of the Kir (an Aperitif made with Bourgogne Aligote and Creme de Cassis, a regional blackcurrant liqueur). But this varietal has been known in Burgundy since the 17th century, and is increasingly considered as a high quality grape variety when treated with respect. Pale straw in appearance, with aromas of fresh citrus, white stone fruits, and notes of almond meal. Fresh and juicy on the palate, with a stony, pebbly minerality and a soft thread of acidity providing a lively mouthfeel. A balanced and refreshing dry white wine that would pair beautifully with shellfish, white meats, and soft white cheeses.
