The growing presence of this great Mediterranean variety is to be celebrated. Even better, when not picked too early. A variety well suited to the warm and dry maritime climate in this part of Australia. Sure, it could be riper. Chewier, even. But this happy medium sure makes for good drinking. Wild fermentation is a bonus. Think lemon squash, orange verbena, grapefruit rind and sea spray. Gulpable in big glasses.
