Sauvignon Blanc grapes were picked in the cool of the night to retain the pristine fruit characters. The fruit was then gently pressed to extract the clean juice, primary fruit flavours and aromas. The pressed juice was cold settled then racked to stainless steel tank for fermentation. Post fermentation the wine was left on lees and mixed once a week to give texture and weight to the wine until the balance between the natural acidity, flavours and aromas was achieved. The wine was then fined, filtered and bottled.

Medium bodied white wines have a lightly textured mouthfeel with moderate flavour impact. Often pale lemon coloured to pale gold.
