The fruit was machine picked then de-stemmed/crushed into open fermenters and inoculated. The ferments were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then drained to barrel for its Malo-lactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 12 months maturation. The wine is further aged
in bottle before release.

Medium bodied red wines have a lightly textured mouthfeel with moderate flavour impact. Often medium in colour.
Dry wines have no trace of sweetness at all.

It is beautifully ripe and fragrant on the nose showing dark plum, dried cherry, thyme, olive and roasted nut characters, followed by a supple palate that is nicely rounded and silky. It is up front and flavoursome with plenty of tasty flavours. At its best: now to 2025.
