Dry, Medium Bodied style of ShirazSerrat Shiraz Viognier is a spicy, elegant, cool-climate style, sourced off a small plot of close-planted vines in Yarra Glen. Serrat is the family label of renowned winemaker Tom Carson and his wife Nadège. The fruit is hand-picked, lightly destemmed and co-fermented with a small amount of Viognier in small open fermenters. Following fermentation, the wine is pressed to 500L French oak puncheons for 11 months maturation.

16yo vines, hand-picked, bunch-sorted, the varieties open-fermented together with 90% whole berries/10% whole bunches, 14 days on skins, matured for 11 months in French puncheons (25% new). The perfumed red fruit bouquet is enticing, but it's the palate that makes the wine, with flavours of black cherry and texture woven together from start to finish, the aftertaste lingering for minutes.
