Mataro is the least famous of the G.S.M. trio, at least in Australia. Widely regarded as suitable mainly for blending, just occasionally someone who really knows the variety makes a batch "sit up and talk." Careful cropping and full flavour ripeness are the key. Fat Cat Mataro is one such wine. Able to stand on its own two feet, it proudly displays the spiced blackberry, meat and licorice characters the variety is capable of. Along with the dark fruit lie elements of fresh blue fruit, savoury dried herbs and light, fine tannins. As far as good Mataro goes, this is a great place to start. Ideally suited to Barossa Valley charcuterie or best quality grilled sausages.
