Pale colour. Expressive white peach, grapefruit, toasty aromas with yeasty, mushroom notes. Well concentrated and richly flavoured wine with baked lemon grapefruit, toasty notes, fine supple, slightly al dente textures, attractive mid palate density, underlying fresh acidity and fine long bubbles. A classic style with lovely weight, texture and freshness. From the 1996-planted Bizot Vineyard, Piccadilly Valley (550m). Drink now – 2025

So much complexity. Nuts and white peach, sherry-like notes, seaspray and butter, sweet bread and more. A flavour profile that is all on its own in an Australian context, arguably, and in a good way too. Texture lives here as well though it’s not overdone; it feels inherent. This is a sparkling wine to savour.
