A base of McLaren Vale Chenin Blanc, selected for its palate weight, complex herbal characters & ripe stone fruit flavours is the canvas for our dry Vermouth. After ageing in a combination of old oak & stainless steel with our special blend of Torino inspired roots, herbs & spices, we introduce our Australian signature to this classic style through a selection of native botanicals. Coastal rosemary & native thyme enhance the savoury green herbal characters, while karkalla adds a slightly salty flavour. The stone fruit & citrus notes of the Chenin Blanc are rounded out with the rich undertones of honey & toasted nuts from roasted wattleseed. The result is a dry & herbaceous Vermouth, with ripe mid palate fruit & a deliciously salty finish.
