Meet The Team
DAVID MOULTON - CHIEF OF WINEMAKING & VITICULTURE
A true local. Born in Busselton, a small coastal town just 30 minutes from Margaret River, David began working in vineyards at 18. The experience sparked a love for wine and viticulture, and he continued to work for local wineries while completing his Bachelor of Science in Viticulture and Oenology at Curtin University. Aside from his experience in Margaret River, David has also worked in the Rutherglen and Great Western regions of Victoria and in the Rhone Valley, France.
Joining Cape Mentelle in April 2014, David shares our dedication to sustainability and innovation. He was a founding member of the Sustainability Sub-Committee for the Margaret River Wine Association and, in 2020, received the Margaret River Wine Show Viticulture Excellence Award.
CORALIE LEWIS - SENIOR WINEMAKER
Hailing from the South West of France, Coralie naturally developed a passion for winemaking. After gaining her Master of Oenology and Viticulture and a National Degree of Oenology at SupAgro-Montpellier, she undertook her winemaking internship in Bordeaux at the prestigious Chateau Cheval Blanc in Saint Emilion and Chateau Beychevelle in Medoc.
Her pursuit of world-class Cabernet Sauvignon and Chardonnay led Coralie to the Margaret River region. It became her platform for exploring the incredible diversity of reds and whites in the region, with its ideal climate and maritime influence.
Leading the Way in Sustainability
The team at Cape Mentelle shares a love for the land and a deep commitment to sustainability that underpin every decision and operation. Certified by Sustainable Winegrowing Australia and ISO 14001, the vineyards focus on biodiversity, composting, and renewable energy, with 100% green electricity since 2024. In the winery, all water is recycled, and energy use is reduced through solar panels, LED lighting, and efficient boilers. Cape Mentelle also supports local initiatives including beach clean-ups, nature conservation, and school education programs, reflecting a long-term dedication to protecting the environment for future generations.
