Ingredients

  • 1 red capsicum
  • 1 yellow capsicum
  • 4 tbsp olive oil
  • Salt and black pepper to taste, freshly ground
  • 1 cup fresh basil leaf, roughly torn
  • 6 slices sour dough, toasted
  • 2 cloves garlic, peeled
  • 200g goat's cheese, roughly chopped

Method

  1. Preheat the oven to 200°C.
  2. Put capsicum on a baking tray and roast them in oven until they start to collapse and the skins blacken.
  3. Transfer to a bowl and cover to trap moisture. Leave for about 10 minutes until the skin loosens.
  4. Peel, cut open and remove the stem and seeds.
  5. Cut into medium chunks.
  6. Dress with olive oil, salt and black pepper, and basil.
  7. Rub hot bread with the garlic cloves and sprinkle with salt, black pepper and olive oil.
  8. Thinly slice the garlic and fry in a hot pan for 30 seconds.
  9. Crumble the goat's cheese over the bread and top with the capsicum.
  10. Drizzle over a little more olive oil and serve topped with the crispy garlic.
