Beetroot Sashimi

Ingredients
- 1 large beetroot, peeled, and thinly sliced
- 2 tbsp olive oil
- 3 tbsp white balsamic
- Salt and pepper to taste
- 100g soft goat cheese of your choice
- 8 mint leaves
Method
- Place the salt and pepper, beetroot, olive oil and white balsamic in a large bowl and toss, coating each beetroot slice evenly, then set aside for 20 minutes.
- Lay the beetroot slices out on a flat platter. Top with pinches of goat cheese rolled into balls and coated in a little black pepper.
- Garnish with mint.
