Ingredients

  • 8 field mushrooms
  • 50g butter, softened
  • Cloves garlic crushed
  • 22 tbsp lemon juice
  • Salt and pepper to taste
  • ⅔ cup panko bread crumbs
  • 2 tbsp olive oil
  • 100g each of parmesan, cheddar and mozzarella cheese, grated
  • 2 tbsp cream

Method

  1. Pre heat the oven to 180°C.
  2. Brush the mushrooms lightly to remove any dirt. Rub a little butter into each underside of mushroom.
  3. In a small bowl add the bread crumbs, lemon juice, garlic, olive oil, salt and pepper. Set aside.
  4. Mix the cheeses and cream together.
  5. Place the mushrooms in an oven proof dish. Place a spoonful of the cheese mixture on each mushroom distributing it evenly on each one.
  6. Sprinkle each mushroom generously with the breadcrumbs.
  7. Place into the oven for 10 minutes until the mushrooms are cooked and the bread crumbs are bubbly and golden brown.
