Manly Spirits Co.

"We’re all about the coast," co-founder Vanessa Wilton says of New South Wales distillery, Manly Spirits Co., “and we put that into our product.” Founded by Wilton and her husband in 2016, the eponymous Manly coast has inspired each and every gin. All are laden with unique coastal botanicals like aniseed myrtle and sea lettuce, all of it sourced locally and sustainably.

Kalki Moon Distilling and Brewing

Taking its name from its home in a Bundaberg suburb, Kalki Moon is Queensland’s foremost boutique gin. Try award-winning Premium Gin with botanical-driven tonics like Fever Tree, taste the Classic, laden with angelica root, cardamom and lemon myrtle, or the rose and elderflower-infused Pink Gin now.

Four Pillars Gin

For Stuart Gregor, co-founder of Victoria’s Four Pillars Gin, there’s one ingredient his distillery can’t do without: community. “I start with the people of Healesville,” he says. “We’re employing more than 80 locals in the Yarra Valley area.” Indeed, Four Pillars is renowned almost as much for its community spirit as it is for its exceptional, innovative and award-winning gin.

The West Winds Gin

What do you get when a scientist tries his hand at distilling spirits? It turns out, something pretty extraordinary! When WA’s Paul White left his scientific career to found The West Winds Gin, even he was surprised at how quickly the accolades rolled in, with The Cutlass Gin taking out the coveted double gold medal at the San Francisco Spirit Awards just a year later.

Twenty Third Street Distillery

Named after the Renmark, South Australia street on which it is located, 23rd Street Distillery is all about promoting that local lifestyle. With the signature bright and lively bottle art crafted by local artists, and its historic locale on the Murray River, the distillery also makes use of refurbished stills from the famous Hardys Tintara, formerly used to make Black Bottle Brandy.

Southern Wild Distillery

Once a Sydney-based consultant, Grant Hirst’s life goals changed thanks to a surprise encounter with a distiller on a trip to North West Tasmania. Inspired by the flavours of one of Australia’s great food production regions, the result was Southern Wild Distillery, and the exceptional and award-winning Dasher + Fisher gins. Loaded with locally-sourced botanicals, it’s a taste of Tassie in every sip.
