Bannisters hotel has been a fixture of the South Coast hospitality scene since its owner Peter Cosgrove converted it from a 1970s motel into Bannisters by the Sea in 2003. As its popularity grew, so did its footprint, with the standalone cottage Bannisters Beach House expanding the family in 2013, then Bannisters Pavilion in 2015, and the luxury bush cabins, eco-houses and glamping dome of Jackson Ranch in 2022. 

The property’s dining venues have kept pace. Most people are across the legendary seafood restaurant Rick Stein at Mollymook, which opened in 2009, but there are also two casual eat-and-drink venues across the properties: The Pool Bar at Bannisters, and what’s probably the most accessible and good-times-guaranteed of the bunch, the lively Rooftop Bar and Grill, only footsteps away from the other two at Bannisters Pavilion. 

The Rooftop is your classic breezy poolside restaurant – a seamless indoor-outdoor configuration with white cane furnishings and neutral linens, juicy, spicy cocktails and snackable food that all adds up to a holiday vibe.

 

Why you stayThe Rooftop can shapeshift into several things, but all are casual, cool and elevated by that unmatched Bannisters hospitality. By day it’s a cool pool bar, and the spot to be is under the canvas umbrellas on the sun loungers next to the aqua-blue, wedge-shaped pool. By night, the pool recedes to decoration, and the seating is mostly indoors where wide open doors let the night breeze shimmer in. The patrons are holidaymakers, locals letting their hair down after a long week, family groups and friends. It’s never not a vibe.

What drink to orderCocktails, of course – you’re frolicking beside a pool, after all. Nothing says ‘pool party’ like a round of Jalapeño and Cucumber Martinis (one of several tequila-based drinks listed under a dedicated Patrón list) or a tropical Mai Tai made with Mount Gay Eclipse rum. Wine-wise, there’s a solid mix of old and new world, and for the most part nothing that’s trying to be too clever or funky. Solid whites include a Nick O’Leary riesling, a big, ripe Russian River chardonnay and a refreshing Francois Chidaine sauvignon blanc from France’s Loire Valley. There’s a good range of local reds – especially by the glass – and a beer for every preference (with Stone & Wood and Balter on tap). Driving or doing a “damp” month? Heaps Normal, or a signature no-alcohol Punch or Spritz have you covered.
What to pair it withThe sticky Korean wings, bathed and glazed with hot sauce and Japan’s Kewpie mayo for dipping, are summer on a plate. The charred corn and avo tostadas are generously loaded, and you can also pick and mix yourself an antipasti plate from the likes of smoked olives, cured meats, whipped ricotta with Middle Eastern Aleppo pepper and chardonnay vinegar, and anchovies. Hungrier? There’s steak and pasta, but the cheeseburger – stacked with bacon and pickles and a generous jolt of burger sauce – is hard to beat.

Why we love itStaying in the region with a group? The ever-friendly Bannisters staff can help arrange local transport for you. If you’re staying at any of the Bannisters properties, there’s a fleet of complimentary shuttle minibuses (staffed by cheery and knowledgeable locals who can give you priceless tips for things to see and do in the region) that can be booked with a little notice.
Regular’s tipTurn up on a Sunday as the sun goes down and you’ll be greeted with lazy-weekend live music from local artists. That’s a pretty good reason to extend your weekend getaway for one more night and call in a sickie on Monday.
Don’t leave withoutOrder a couple more drinks at the end of your dinner booking and take them over to the swinging egg chairs near the entrance, facing the pool, for a nightcap under the stars.
