A busy night inside Ricos Tacos in Sydney

A revamped inner-city pub is now home to some of Sydney’s most sought-after tacos, with vibrant decor, cold beers and an arsenal of mezcal and tequila to match.

Why you goTacos and pubs both rank high on the long list of things Sydneysiders hold dear. Tacos in pubs, however, is another story, and usually a pretty tragic one. At least until now. After running a series of wildly successful pop-ups and finding a few semi-permanent homes, barista-turned-chef Toby Wilson has finally laid down roots for his beloved Ricos Tacos banner at The Norfolk Hotel – and it couldn’t be a better fit. The inner-city pub has worn several hats over the years, but finds itself in stronger form than ever thanks to a wicked once-over by new owner Public Hospitality Group and artist Michael Delany. The ground floor has been coated in bright-yellow paint, giving the place a proper Tijuana street-party vibe, complete with breeze blocks and murals of blabbering goats and boogying tacos. Upstairs, that party kicks on at what’s known as Club Ricos, a ’60s-inspired sports bar brought back to life by way of wood-panelling, vinyl seats, vintage soccer photos and a mirror ball, where DJs jog the wheels on Friday and Saturday nights. Taken as a whole, it’s a testament to the scope of Sydney’s pub scene and proof that a great beer garden is a real thing of beauty.
What drink to orderYou can follow the classic pub path with a big-name ale or house sauvignon blanc, but why not let the Mexican theme steer you towards something more exciting? If that sounds like beer to you, perhaps a malty-sweet Modelo Especial lager or an Australian take on clean, crisp Mexican-style beer from independent Northern Beaches brewery Modus Operandi? In terms of cocktails, Margaritas are an obvious port of call, but you can change the pace with a cocktail on tap – perhaps a play on the Paloma spiked with lemongrass and sherry or a feisty combo of Italy’s bittersweet Campari liqueur and cola. And, as far as snappy wine lists go, this one scores high by keeping prices low, with bottles by on-trend lo-fi makers like Borachio and Brave New Wine punching in between $50 and $75.

What to pair it withThe name tells you almost everything you need to know: tacos are the ticket here, and Toby Wilson’s long-standing signature al pastor remains the star. Two house-pressed corn tortillas form the base of the thing, which can be taken down in two to three bites and drips with juicy spit-roasted pork, avocado salsa and a strip of pineapple. The shredded-chicken number coated in earthy, coffee-almond mole sauce comes a very close second. You’ll want some corn chips too, of course, and the three condiments that come with them, which include a smoky, slushy red salsa and a creamy, garlicky black bean dip that might even outshine the guacamole. (Pro tip: save some of each to spread across the hash browns, which may strike you as out-of-sync with the rest of the menu but can’t be missed.)
Why we love itWhere most pubs play by a fairly standard set of rules, The Norfolk shoots for something far more specific and still scores big on universal appeal, helped along by a pro-dog agenda and the offer of a kids’ menu. What’s more, the menu is almost entirely absent of gluten, with plant-based and dairy-free options aplenty, so you’ve got a solution to the near-impossible search for that perfect, affordable place that caters effortlessly to big groups.

Regular’s tipIt pays to know about the specials at Ricos. On Wednesday nights, that means a tinnie and a torta (or burger) with chips for $20, while Sundays are all about asada steaks grilled over coals in the courtyard from 1:00pm until sold out. Stay up-to-date on the socials, too, to keep tabs on the scroll-stopping tacos and tostadas of the week, which buck tradition in clever and very tasty ways – we’re talking a West Indies-style lamb curry taco with coconut chutney, or a tostada that riffs on Hainanese chicken rice.
Make it fancyWhile this may be a very pocket-friendly pub, that’s not to say you can’t throw down big bucks for top-shelf tequila and mezcal. At $40 a nip, the highly coveted Clase Azul reposado tequila is the priciest pick of the bunch; those who like their spirits with a bit more age might spring for a $34 pour of oaky, vanilla-rich El Cristiano extra añejo tequila. As for the dozen or so mezcals, $29 almost seems like a small sum to taste the fruit-driven wild ride that is the Dixeebe Pechuga #3, distilled with a raw turkey breast, and one of only 800 bottles worldwide. Buckle up.
