Why you goYou might go to Gum because you live for the earthen tones and freewheelin’ fun of the 1970s, but if you’re honest with yourself, you want to drink something rooted in the now. On Collingwood’s avenue of excellent bars, this Johnston Street haunt from musos Chris Wright and Jonathan Reisacher has all the psychedelic wallpaper, wooden accents and throwback rock ’n’ roll sensibilities you can shake your shaka at, but with one important twist: the drinks are made by people who really like making drinks, and who have rather a knack for putting them together. Welcome to Gum, a relaxed, modern Australian cocktail bar, and one of the finer watering holes on a strip of fine watering holes.
Why you stayIf you’ve snagged a stool at the bar, you’re either staying for a chinwag with drinks gun Miles Brooks, or with debonair boss man Chris Wright, who also runs a record label out of the recording studio upstairs. If you’re here because your favourite band’s spinning a vinyl set after the Melbourne leg of their tour, you’ll be posting up in the front bar. Otherwise, you’re beelining for the middle room where the floor-to-ceiling kaleidoscope of deranged floral wallpaper leaves you little option but to unwind in full with the crew.

What drink to orderA typical Gum crowd enjoys a frosty pint as much they do something fancy out of the cocktail shaker, so it could very well be a Venom Cherry Sour or Moon Dog Lager, but it could just as easily be an Oolong Cooler, built with sour-plum vodka, lemon, white peach and oolong tea. Then again, it might be more the kind of night for a Mulled Cider & Bergamot Cream, the winter warmer piled high with nitrous-charged, citrus-spiked coconut cream. Either way, space should be made for a Pub Squash, an all-out lemon fest of tequila, lemon juice, limoncello, preserved lemon, lemon thyme and lemon-myrtle tea that tastes a lot like lemon. Paralysed by choice? Ask your bartender for guidance – they’ll be more than happy to lead you down the righteous path, which often ends with a Yuzu Spritz: refreshing, citrusy, delicious.
What to pair it withHungry? A cured sausage served with mustard marmalade might take the edge off, but Gum doesn’t really do meals per se. Instead, the team encourages you to order a very good pizza from neighbouring parlour Thin Slizzy, whose menu is rich in good-bad band puns: the Meatallica, the Red Hot Chilli Peperonata, the Smashing Pumpkin, to name a few. Great ingredients thinly spread over a light base – these are some of the better pies in the neighbourhood, and if you’re lucky, yours will be delivered to you by a staff member on a skateboard. Greet them with a happy “Cowabunga!” if so.
Why we love itWe love the unpretentiousness. We love the drinks, and we love that they outperform expectations. We love the framed pictures of horses on the walls, the service, and the air of excitement when the bar’s in full flight. We love this stretch of Johnston Street, and we love that it’s only growing stronger. Most of all, though, we love that lived-in quality – something that’s really hard to fake, and something that Gum, despite being only three years old, has in spades.
Who to takeWe’re not talking jet-engine decibels, but the music is definitely one of the main reasons you’re here and it’s not super-quiet. With that in mind, you should bring your folks by all means if you think they’ll be into it. Plenty of successful dates have been had here, and it could just be the move that takes you off the market forever. All in all, though, Gum is best enjoyed with a proper squad – there’s plenty of room for yours between the front bar and the space out the back. And if you arrive early enough on a weekday, you might find the atmosphere to be just the kind of laid-back cool that lends itself to a spot of late-arvo laptop work.
