Everyone’s favourite passionfruit cocktail is reimagined as a Spritz for the whole gang.
Sometimes, we get kind of loose with the word ‘Martini’. The Pornstar Martini – a heady mix of passionfruit liqueur and pulp, vanilla vodka, syrup and sparkling wine – is one of those times. But while it couldn’t be further from the gin and vermouth duo that makes up a classic Martini, we don’t really care. The Pornstar Martini is bloody delicious, and that’s good enough for us, so the same applies to its even-less-of-a-Martini sibling, the Pornstar Martini Spritz. Martini purists, you may exit quietly now.
The Pornstar Martini Spritz takes everything that you could possibly love about the OG Pornstar Martini and makes it great for a group. Here, that means we’re serving things jug-style, lengthened with passionfruit soda. We’re also dropping the passionfruit liqueur to keep things light and breezy. The rest is the same, meaning you’ll still get the rounded sweetness of vanilla, the tropical zestiness of passionfruit and lime juice, and the subtle complexity of sparkling wine – all in a bubbly, Spritz-style serving.
What we love about this (and all batched cocktails) is that they’re perfect for entertaining. Sure, you could whip up a few rounds of Pornstar Martinis, but spending a little time making a large batch and setting out a jug and glasses for the gang means less work overall. Method
Add the vanilla syrup, vodka, lime juice and passionfruit pulp to a large jug and fill with ice Gently add the sparkling wine and passionfruit soda to the jug, and stir with a cooking spoon Half-fill the glasses with ice and serve the Spritz, using the spoon to hold the ice back Fill glasses with a touch more ice and garnish with one passionfruit half-filled with sparkling wine and mint
Dan’s top tips
The first thing to keep in mind is the passionfruit – specifically, whether you’re using fresh fruit or canned pulp. Both are totally fine, but each requires a slightly different approach. If you’re using fresh passionfruit, stick with the recipe above. But if you’re reaching for canned pulp, it tends to be sweeter than fresh passionfruit, so use 80mL of pulp (20mL for each serve) and add an extra 15mL of lime juice to balance things out. Both bring tasty results, but if you need another reason to go for fresh, keep those husks for a garnish – they’re great filled with a little extra sparkling wine. As for that vanilla syrup, you can generally buy one ready made, but sugar syrup is easy to make, and the vanilla version is a simple twist. As detailed in our Death Flip recipe, you’ll just need a vanilla pod, split down the middle, and a 700mL bottle of 1:1 ratio sugar syrup. Shake it and leave it to infuse overnight, and you’re good to go.
