About the cocktail

Well, looky here, if it isn’t our favourite media personality, the king of content, Louis Hanson (or should we say handsome?). You may or may not be familiar with Louis the person, but you’ve definitely come across his work before in PEDESTRIAN.TV, The New York Times, SBS, Out Magazine, VICE and The Guardian, to name a few. Wondering how he explains his career to the average citizen? Same.

“I used to try explaining my multi-hyphenate ways, which only led to some wary nods and more confusion. So now I just say I work in finance – less questioning,” explains Louis.

Louis kindly lent us his talents for this delicious cocktail collab, the Honeyrita. Think: classic Marg but with a honey and herb twist. Before we start prepping our ingredients for this life-changing drink, let’s get to know our good pal Louis a little better. Starting with: If you were a cocktail, what would you be and why? “A Corpse Reviver – that is precisely how I feel trying to acclimatise to post-lockdown life.”

Honestly, same. But luckily we’ve got Louis breathing new life into us with his cocktail skills. Though he’s new to the cocktail-making game, he’s definitely a natural and was surprised at how easy it was. “It showed me that, with a few quick and easy additional steps, you can really elevate your drink. And THAT, my friends, is hot.”

You heard it here first, folks; elevating your cocktails with ol’ Dan Murphy is hot. So, what was the inspiration behind the Honeyrita cocktail, you ask? “The classic Marg is my favourite cocktail on planet Earth, so I was keen for a sexy iteration of it. Enter the Honeyrita!” 

And for anyone asking, we also love a good Marg. So, what should we be eating with this sexy cocktail, Louis? “When I think of the Honeyrita, I’m imagining poolside oysters and prawns. Is that too much to ask?!” Nope – it’s what we deserve.

Ingredients

  • 20mL honey syrup (see method below)
  • 25mL lemon juice
  • 50mL tequila
  • Garnish: salt and rosemary for the glass rim, and lemon wheels

Method

  1. For the honey syrup, heat a cup of water in a saucepan to a gentle simmer (do not boil). Slowly add in a cup of honey and stir slowly, making sure not to burn. When honey is dissolved, remove the saucepan from the heat and let it cool before using
  2. To make your glass look pretty, finely chop fresh rosemary and add to a small bowl of flaked salt. Mix until combined. Rub the edge of a tumbler glass with a lemon wedge, then roll the edge through the rosemary-salt mixture
  3. Add your lemon juice, honey syrup and tequila into a cocktail shaker
  4. Add a handful of ice and shake vigorously
  5. Strain your cocktail into the salt-rimmed glass, top with ice and garnish with two lemon wheels

Louis’s top tips

Thinking about giving the Honeyrita a go at home? We sure are. But before you start shaking and mixing like a real mixologist, Louis has some tried-and-tested tips to make sure this cocktail is living up to its full potential.

Firstly, it’s all about the rosemary. “This is the real champion of the cocktail for me – it adds a really unique flavour to the classic Margarita – so make sure the rosemary is nice and fresh and chopped up as finely as possible!”

Jumping on the back of that excellent tip, we’d like to add that the lemons in this recipe are also super important. While store-bought lemon juice is an easier option, you won’t get the same great fresh, citrusy taste as you would from a freshly squeezed lemon.

Lastly, if you’re wondering when exactly you should be serving this delicious drink, Louis has some insight. “It’s 7pm. The sun is setting, the vibes are high, you glance at your phone – it’s a message from the group chat. ‘What are we doing tonight, girlies?’ they ask. It’s on – you’re having Honeyritas.”
