Made from White Claw, tequila, fresh mango and a bit of Tajin spice, it’s the perf crowd-pleasing cocktail for all your sunset sessions. If you’re not familiar with Aurelia, you need to be. You would have most likely seen them pop up on your TikTok FYP, delivering all the funnies. They are a comedian, writer and podcaster known for their two successful podcasts, Non-Dairy Presenting and Pop Gays – both of which are outrageously good. Subscribe immediately. On their days off from being the funniest person in the room, Aurelia is all about a sleep-in and a long, late brunch. “I love to spend the afternoon browsing books, records and vintage clothing. Or going for a cocktail at Rooks Return in Fitzroy [in Melbourne].” Of course, if you’re serving up cocktails at home, Aurelia highly recommends this fruity, summery deliciousness, the Sunset Cooler. “I love cocktails that fit more than one flavour profile. The Sunset Cooler is both sweet and spicy – perfect!” Once that’s mixed up, Aurelia has a few ideas for their dream cocktail party guests. “I'm inviting Solange, Sza and Shea Couleé,” says Aurelia. “Solange and Sza are getting a Martini, and I’m making a Mai Tai for Shea.” If you’re feeling a bit tropical, and have a hankering for something a little sweet and fruity with a kick of spice, then definitely have a go at Aurelia St Clair’s Sunset Cooler.

Ingredients
30mL tequila 30mL fresh mango chunks
30mL lime juice
10mL agave syrup
90mL Mango White Claw
Garnish: Tajin Chilli and Lime Seasoning, lime wheel
Method
Pour a small amount of Tajin seasoning onto a plate, then coat the rim of a highball glass with lime juice before dipping it into the Tajin – set the glass aside for later Add a handful of ice, tequila, mango chunks, lime juice and agave syrup to a cocktail shaker Shake, then pour into the prepared highball glass filled with ice Top with your White Claw and give it a quick stir Garnish with a lime wheel and serve
Aurelia’s top tips
One of the best things about Aurelia’s cocktail, the Sunset Cooler, is how easy it is to make. It's a very simple shake-and-dump-into-a-glass kind of cocktail, which is perfect for a lazy summer’s day. Aurelia suggests using fresh mangoes, but if you’re mixing this up out of season, when this fruit is either extremely expensive or unavailable, frozen mangoes will work well, too. If making a few, you could even blitz it all together in a blender – minus the White Claw – and it will bring a different texture to the drink, upping those tropcial vibes. To complete the experience, Aurelia suggests using serving up some “tacos, nachos and guacamole” to nibble alongside it.
