The Lamington cocktail is a dreamy take on the classic Aussie treat

This decadent, dreamy take on the classic Aussie treat is too hip to be square.

About the cocktail

  • The lamington has been embraced across Australia for more than 100 years as a morning-tea staple, fundraiser fixture and kids’ party favourite. So, naturally, with our passion for decadent dessert cocktails, we just had to put our grown-up spin on it.
  • The humble lamington – bouncy sponge cake, dipped in melted chocolate, sprinkled with desiccated coconut – has received boozy tributes before, but nothing quite like this. Our expert mixologists tested, tweaked, and, ahem, tasted, until the rich, jammy treat that you see before you was perfect. 
  • It starts with making coconut syrup (dead easy, we promise). Add that to strawberry jam and vanilla liqueur for a devilishly drinkable dessert that’s smartly balanced by rich, sweet bourbon. 
  • This adults-only lamington is serving ‘nightcap’, not ‘morning tea’, so next time National Lamington Day rolls around (21 July), ditch the cake tin, and grab a cocktail shaker.

How to make The Lamington cocktail

Ingredients: coconut syrup

  • 100g coconut cream
  • 100g white sugar

Ingredients: cocktail

  • 45mL bourbon
  • 15mL vanilla liqueur
  • 2 tsp strawberry jam
  • 30mL coconut syrup
  • Glass: tumbler
  • Garnish: desiccated coconut and freeze-dried strawberries

Method

  1. To make the coconut syrup, add the coconut cream and white sugar to a blender, and blitz until the sugar has fully dissolved (see top tips below)
  2. Add all ingredients to a cocktail shaker
  3. Add cubed ice and shake until the outside of the tin is frosty
  4. Carefully fine strain into a glass with ice
  5. To garnish, sprinkle with desiccated coconut and freeze-dried strawberries

Dan’s top tips

  • To make the coconut syrup, an electric blender is the easiest way, but it can also be hand beaten. Either way, just ensure the sugar fully dissolves. The simple 1:1 ratio means you can easily make different quantities by equally upping or reducing the coconut cream and white sugar in the mix.
  • Play around with the bourbon here. The bourbon world offers a plethora of diverse flavours and styles, so your personal favourite will put a subtle spin on the flavour profile. 
  • Like other lamington-inspired cocktails, our recipe features a cheeky dollop of sweet strawberry jam. If strawberry isn’t your jam, or you don’t have any, feel free to experiment with any other berry jams. Plum can also work as a tasty substitute.
  • The Lamington cocktail is a rich, textural drink that benefits from a consistent icy chill, with little to no dilution. For the best results, be sure to shake and serve this with cubed ice, not crushed, to keep it drinking fresh to the last delicious drop.
