About the cocktail

  • The Daiquiri must have had the best parents. The classic version is a testament to Cuban simplicity – it’s just rum, sugar and lime juice – but since then, the Daiquiri has basically followed its dreams, knowing it can be anything it puts its mind to. A fruit-infused drink with mango or pineapple or strawberry? Sure thing. Blended into a Slurpee-like icy smoothness? Yes indeed. Mixed with hot honey and coconut cream for a tiki-ish vibe? Yes sir, and that’s exactly what the Hot Honey Coco Daiquiri is all about.
  • The base cocktail here is a pretty standard lime-and-rum Daiquiri. The not-so-secret ingredient is hot honey – a spicy version of regular honey that you might have had with Southern-style fried chicken. If not, it does exactly what it says on the tin: it’s honey with a whack of chilli heat. Here, it works perfectly, bringing classic sweetness to the Daiquiri (with that rich honey depth, of course) while adding a fiery kick that’s balanced by the coconut cream. The result is a zesty, sweet, creamy, spicy cocktail that dials up the original’s tropical-island style perfectly.

Ingredients

  • 20mL hot honey (see tips below)
  • 30mL coconut cream
  • 50mL spiced rum
  • 15mL lime juice
  • Glass: coupe
  • Garnish: lime zest

Method

  1. Add the hot honey and coconut cream to a cocktail shaker and stir these together until they bind 
  2. Add the rum, fresh lime juice and a good scoop of ice
  3. Shake until the outside of the tin is frosty
  4. Double strain into the glass and garnish with the lime zest on top

Dan’s top tips

  • Let’s talk hot honey. If you’ve never heard of it before, you might be surprised to know that it’s getting pretty popular – and you should even be able to find it at many supermarkets now. Typically, hot honey is just regular honey infused with a spicy chilli like habanero, which means it’s easy enough to make yourself if you can’t buy one – just take it easy with the ratios. If all else fails, you can simply add a little chilli powder or chilli flakes to your honey and mix it through.
  • For another note on the honey, it doesn’t like to get cold. For this reason, you’ll need to mix the hot honey with the coconut cream in this recipe first to make sure they’re well incorporated. Otherwise, the honey will turn into a giant Werther’s Original as soon as it hits that ice.
  • Traditional Daiquiris call for white rum, but for the Hot Honey Coco Daiquiri, we like the vanilla-heavy flavour of spiced rum. You could also go even harder on the coconut flavour with a coconut rum like Malibu if you wanted – trust your taste buds and get creative.
