About the cocktail
A marriage of two of the most popular pink drinks in the biz, the Cosmo Bellini is a contemporary fusion of the classic Cosmopolitan and Bellini cocktails. Together, this dynamic duo creates a slightly mellower brunch-worthy drop while maintaining the tell-tale tang and lilting aromatics that these blush-coloured bevs are famous for. Fizzy, fruity and citrusy, this crowd-pleaser mixes the classic Sex and the City Cosmo with the Venetian vibes of the Bellini. It’s a blend of peach puree, peach schnapps and a splash of cranberry juice, topped off with prosecco for fizz, and orange peel for extra freshness. It’s the kind of peachy perfection Carrie “couldn’t help but wonder” why she hadn’t tried earlier. A hot little hybrid, the Cosmo Bellini is great for ringing in cocktail hour. With its sunset hue, this tart, crisp and fruity drink makes an ideal aperitif as well as being easy to whip up in batches for your next gathering.

Ingredients
30mL peach puree 30mL cranberry juice 10mL peach schnapps Prosecco, to top Glass: flute or coupe Garnish: flamed orange peel or fresh orange twist
Method
Add all ingredients, except prosecco, to a cocktail shaker with ice Shake briefly until the outside of the tin is frosty Strain into the glass Top slowly with prosecco Finish by flaming the orange peel over the top, if using, or garnish with the orange twist
Dan’s top tips
We recommend making our tried-and-tested version here first, but once you get the main flavour profiles down pat, feel free to give it your own twist. If you can’t find any peach puree, the best and easiest substitute is to grab a tin of peaches in juice and blitz the whole thing – including the liquid – for a lovely whipped-up DIY puree. Like things a little more bubbly? Play with the balance of prosecco to dial up the fizz factor. Prefer it a little fruitier? Add a hint of lime juice or a lime twist to the mix à la the classic Cosmo. The flamed orange peel is optional, but if you’re feeling game, it can make a difference. Lighting the peel over the drink releases lightly caramelised oils out and onto the surface of the cocktail. This helps to enhance the citrus burst in the drink, not to mention add a little flair to your hosting cred. Just ensure that your citrus is fresh, your knife is sharp, and you run the flame across the coloured side of your sliced peel about 5cm away from the fruit – and always away from yourself. You can also run the peel around the glass rim before popping it in the drink. Sound like too much effort? Feel free to simply pop in an orange twist instead – this will still bring loads of aromatics to your Cosmo Bellini.
