About the cocktail

  • Two of the best holiday cocktails have to be the Margarita and Piña Colada and, honestly, it’s hard to split them. With our Coconut Limoncello Margarita, though, we reckon you might just be getting the best of both worlds.
  • The OG Margarita has the brightness of lime and earthy, citrusy punch of tequila, while the Piña Colada brings that sweet, creamy coconut flavour that gets us daydreaming about tropical holidays. We’ve created summery mash-ups before, like the Pineapple Coconut Margarita, and once again, our cocktail recipe geniuses have taken the best of both cocktails, combining tequila, citrus and coconut cream. Add in the sweet, lemony flavours of limoncello (which, especially in Limoncello Spritz form, is also a holiday superstar), and you’ve got a cocktail that seems purpose-built for warm-weather hangs with your favourite people.
  • Besides being a little getaway in a glass, the best thing about the Coconut Limoncello Margarita is that it’s dead simple yet super impressive – a perfect cocktail for showing off to your mates. And we know they’re going to love this cocktail’s twist on the classic salt rim – it’s upgraded with lemon, salt flakes and desiccated coconut to really ramp up the flavour hit. From there, all you need to do is shake the ingredients together (first the agave syrup and coconut cream, then everything else) and start relaxing.

Ingredients: garnish

  • 3 parts salt flakes
  • 1 part desiccated coconut
  • Lemon cheek 

Ingredients: cocktail

  • 15mL agave syrup
  • 15mL coconut cream
  • 30mL blanco tequila
  • 20mL limoncello
  • 15mL lemon juice
  • Glass: rocks
  • Garnish: salted coconut for the glass rim

Method

  1. To prepare your glass, combine the salt and coconut in a shallow dish. Wipe the glass rim with the cheek of a lemon and dip it into the mix. Pop the glass in the freezer until you’re ready to serve
  2. Add the agave syrup and coconut cream to a cocktail shaker, and stir well together so they bind
  3. Add the tequila, limoncello and lemon juice, then fill the shaker with ice
  4. Shake the tin hard until it’s frosty on the outside
  5. Strain the drink into your chilled, prepped glass over ice

Dan’s top tips

  • As with the classic Marg, our Coconut Limoncello Margarita starts with blanco tequila. If the coconut cream and salted coconut rim isn’t enough tropical goodness for you, feel free to switch up the blanco for a coconut tequila. That’ll boost those island vibes nicely.
  • The other star of the show here is limoncello, which subs in for the traditional triple sec of the classic Margarita. Any limoncello will do here, so use your favourite. The Italian classics are traditionally from Sorrento, but Australia is making some great local versions, too.
  • If you’re anything like us, you’ll see the Coconut Limoncello Margarita and start dreaming of shaking up a batch for your crew. One way to get ahead of the prep is to prepare the rimmed glasses ahead of time. Pop your flaky salt and desiccated coconut in a dish, wipe lemon around the rim of each glass and dip away. Clear some space in your freezer for the glasses until you need them, and then you only have to shake and serve when your friends arrive.
