About the cocktail

This is one of those ridiculously easy, yet oh-so-tasty Champagne cocktails that, once discovered, you’ll keep on high rotation. A riff on the classic Kir Royale, it substitutes creme de cassis for the slightly more exotic sweet black raspberry flavours of Chambord liqueur.

Combining just two ingredients (when you don’t include the garnish), cocktails don’t get much easier than adding prosecco or Champagne to a coupe glass, and then splashing in some Chambord. Simplicity is the key, producing an elegant drink that not only tastes great, but it's also as pretty as a picture.

Chambord is a relatively recent creation, despite looking like a bottle straight out of a 17th century French salon. In fairness, it’s inspired by a French liqueur recipe from the Loire Valley created in the 1680s. It combines red and black raspberries, Madagascan vanilla, honey and citrus in a Cognac base, which produces a sweet, rich liqueur that perfectly dovetails with the crisp, zesty flavours of sparkling wine. And did we mention the colour? Every glass is worthy of a photo, making it one of the easiest and most impressive drinks you’ll ever make.

Ingredients

  • 85mL prosecco or Champagne
  • 15mL Chambord
  • Garnish: blackberry

Method

  1. Carefully pour the sparkling wine into a coupe glass
  2. Add the Chambord
  3. Garnish with a blackberry on the glass rim

Dan’s top tips

With just two ingredients, there’s nowhere to hide, so make sure you choose a prosecco or Champagne that you know you’ll enjoy. Freixenet Prosecco is a great choice, as it’s not too dry and not too sweet, making it the perfect middle ground for most people’s tastes.

Black raspberries are the ideal garnish here, but blackberries are much more common, which is why we have included them in this recipe. If you can't find either, feel free to use regular raspberries instead. 

And don’t forget that you can easily adapt the recipe to suit your tastes – dial up the Chambord if you prefer a sweeter drop, or pull it back if you like your cocktails slightly drier.

As we mentioned earlier, this is a slight tweak on the Kir Royale, so you can easily substitute creme de cassis for the Chambord and enjoy a similar style of cocktail. Santé!
