The Chambord Bellini cocktail

Get to know this Chambord cocktail that’s a sweet twist on the classic Bellini.

About the cocktail

Who doesn’t love a Bellini? This sparkling, peachy goodness was perfected on the streets of Italy’s Venice and has since wormed its way into the world’s hearts. The cocktail was invented at the famous Harry’s Bar in the 20th century, but don't worry, it tastes as good in your living room as it does in situ at the Piazza San Marco. The Chambord Bellini puts a sweet raspberry twist on the classic Bellini, and with just two ingredients – Chambord and prosecco – the recipe couldn’t be simpler, bringing together the best of France and Italy.

Chambord is a Cognac-based liqueur that’s become a popular ingredient in modern cocktails. It’s made from red and black raspberries, citrus peel, honey, raspberries and Cognac, coming in at 16.5% ABV. It’s rich and sweet with a touch of tartness, and while there are other raspberry liqueurs on the market, Chambord is ideal here. The bottle happens to be stunning, too.

Mixing Chambord with prosecco makes for a classic sparkling cocktail. The raspberry liqueur adds a fruity sweetness without overpowering the prosecco, meaning you can still appreciate the wine. It’s super simple to make and looks beautiful, so it’s sure to impress a loved one over a special dinner or everyone at your next party.

Dan’s top tips

If you’re making a few Chambord Bellinis for a party, then prepare by pouring the Chambord first and adding the prosecco when each guest arrives. This will ensure the bubbles stay fizzy.

You can also switch up your sparkling wine of choice – Champagne and Spain’s Cava are both excellent options, just be sure to use a dry style. Brut, Extra Brut and Brut Nature styles are the best because they’ll balance the sweetness of the Chambord. For prosecco, the driest style is simply Brut, with Extra Dry and Dry being the sweeter versions. It can be a little confusing, so don’t hesitate to ask someone at Dan's for direction when picking out a sparkling wine.
