About the cocktail
Making a good thing even better, here comes our fab recipe for the Biscoff Espresso Martini. Part vodka, part coffee, part hazelnut, and just the right amount of speculoos, AKA Biscoff. There has been a tonne of hype surrounding the spreadable speculoos of late, so if you’ve been wondering how to use Biscoff in a cocktail, try this variation on the simple Espresso Martini. It’s a perfect marriage of two serious vibes.
But what is Biscoff? Well, it's a Belgian product made up of wheat flour, candy syrup, fat and sometimes cinnamon, and traditionally comes in biscuit form known as speculoos. However, now it also comes in a delish spreadable, which has been used as filler for doughnuts, mixed into lattes and, well, spread, piped and dotted through anything and everything sweet, as evidenced by our TikTok feeds right now. Speculoos – not to be confused with the Dutch speculaas – is a simpler biscuit with just cinnamon, whereas its Dutch older brother is made up of many spices. This is due to spices being cheaper to import to the Netherlands than Belgium in the early 1900s. Fast forward to today and the humble cinnamon biccy is taking the world by storm.
Mixed into a cocktail, this speculoos spread is perfect as a sub for dessert or afternoon tea. It is rich and creamy with a welcomed touch of cinnamon that elevates the coffee flavours of the drink. And best of all? There is a whole jar of Biscoff left to enjoy.
Ingredients
2 tbsp Lotus Biscoff Spread
25mL vodka
25mL hazelnut liqueur
25mL coffee liqueur
30mL espresso coffee
Garnish: 1 tsp Biscoff spread and 4 crushed Biscoff biscuits for the glass rim, plus extra Biscoff biscuit or loose coffee beans to finish
Method
Spread a teaspoon of Biscoff around the rim of your Martini glass, then dip it into a shallow dish filled with crushed Biscoff biscuits to coat the rim. Place in the freezer until ready to serve
Place the prepared glass into the freezer until ready to serve
Fill a cocktail shaker with ice, then add all remaining ingredients
Shake thoroughly for at least one minute (and we mean SHAKE)
Pour into your frosted, Biscoff-rimmed Martini glass
Garnish with a Biscoff biscuit or loose coffee beans and enjoy!
Dan’s top tips
We’ve said it once and we’ll say it again – make sure you shake this bad boy thoroughly. Biscoff spread is thiccc, so you need a lot of vigour to break it up in the shaker, plus all that shaking adds a delightful foamy top layer.
