The highly regarded champagne producer, Moutard, also have a noteable presence in Burgundy and Cognac. Their Chablis is a fine example of modern Chablis. The winemaking  consists of alcoholic and malolactic fermentation under temperature control in stainless steel tanks for 50% of the wine and 50% in oak barrel (of 228 liters). Ageing on lees after fermentations of 8 months, in both stainless steel tanks and old oak barrels. Bottling 8 months minimum after harvest.  Indigenous yeast is used exclusively.
Almost straw in colour. Surprisingly developed aromas, which include green apples, gooseberries, lemon peel and crisp mineral notes. It is light bodied and nicely balanced, very fresh, dry ample and elegant, with a slightly nutty finish.

Medium bodied white wines have a lightly textured mouthfeel with moderate flavour impact. Often pale lemon coloured to pale gold.
