Baby Chat Potatoes Wrapped In Pancetta

Ingredients
- 16 chat potatoes
- 8 thin slices of pancetta
- Sea Salt
- ½ cup aioli
- 1 tbsp lime zest
- Olive oil to serve
Method
- Place the potatoes in a large pot of cold water.
- Bring to the boil, cook until the potatoes are just tender, remove from heat and drain.
- Once the potatoes are cool enough to handle wrap half a slice of pancetta around each and place in a baking tray.
- Place the tray in a hot oven 200c for around 10 min until the pancetta has become crispy.
- Toss a little olive oil in the tray to coat the potatoes.
- Remove from the oven and press down firmly on each potato to crush.
- Mix the aioli and lime zest together.
